Pot Roast

Pot roast made from inexpensive (relatively) cuts of beef is still a great value, about $6/lb, tastes great and is easy to make.  Costco, Sam's Club, BJ's and your local grocery store all bottom round, chuck beef oasts from October into the late winter.

Total time: about 2.5 hours

Cooks for about: 1 hour 15 min
Yield: 10 servings


  • Beef Chuck roast or Bottom Round or Top Round.  Chuck is more tender.
  • Olive oil
  • Salt and pepper
  • Onions
  • Minced Garlic
  • Chicken or Beef broth
  • Worcestershire sauce
  • Fresh thyme, rosemary and parsley
  • Red Potatoes or Yukon gold potatoes small ones are best
  • Carrots
  • Cornstarch

  • 1 teaspoon minced garlic (about 3 cloves)
  • 1 tablespoon minced fresh rosemary leaves (that's about 3 springs)
  • Salt (optional)
  • Freshly ground black pepper
  • 2 tablespoons unsalted butter, melted
  • 1 (5 or 6-pound) boneless leg of lamb, trimmed and tied (Costco sells it like this)
  • 4 to 5 pounds small unpeeled potatoes (16 to 20 potatoes)
  • 2 tablespoons olive oil
