Lamb is still a great value, about $6/lb, tastes great and is easy to make. Costco, Sam's Club, BJ's and your local grocery store all carry leg of lamb and lamb roasts from October into the late winter.

Preheat the oven to 450 degrees F. Position the rack in the oven so the lamb will sit in the middle of the oven.
Put the garlic (minced or peel fresh cloves), the rosemary, 1 teaspoon salt, 1 teaspoon pepper, and 2 Tablespoons of butter into a food chopper or processor (or a blender). Process until it's finely minced, and looks like Basil Pesto.
Coat the top and sides of the lamb with the herb mixture. Allow to marinate at room temperature for 30 minutes to 1 hour.
Put the potatoes into the bottom of the roasting pan. Then put the lamb on top of the potatoes.
Roast for 20 minutes.
Turn the heat down to 350 degrees F and stick an oven-safe meat thermometer into the center of the lamb.
Roast for another 1 to 1 1/4 hours, until a meat thermometer registers 130 to 135 degrees F for medium-rare., 140F - 145F for medium
Place the lamb on a cutting board, cover with aluminum foil, and allow to rest for 15 minutes. Slice and serve with the potatoes.
